Harvest Pride® Canapes

So simple to make and so delicious. Your guests will really enjoy this unique treat. Makes 1 dozen.


1-2 heads Belgian Endive (12 good leaves)
3-4 oz. fresh goat cheese (not aged) or blue cheese
2 tablespoons chopped chives
1 teaspoons fresh lemon juice
1/2 small fennel bulb, make 12 slices, finely chop the remainder
12 Meduri World Delights Harvest Pride® peach slices
2 tablespoons (1 oz.) chopped toasted almonds
balsamic vinegar


  1. Separate the endive leaves and arrange them on a platter.
  2. Mix the goat cheese with the chives, lemon juice and chopped fennel bulb in a small bowl.
  3. Portion out the cheese mixture onto the leaves.
  4. Top each with a Harvest Pride® peach slice, garnish with fennel slices and toasted almonds. Drizzle each canape with a little balsamic vinegar.
